
This is a favourite in our house and a great meal to prepare with the children (even though my children refuse to make balls so we end up with falafel people, bless 'em!)
Ingredients
400g of cooked chickpeas (garbanzo beans)
1 onion chopped
2 cloves of garlic crushed
A handful of fresh parsley
2 tbsp of flour or 1 piece of bread, crumbed
1/2 tsp of cumin
1/4 tsp f curry powder
1/4 tsp of tummeric
1 tsp of sea salt
3 tbsp of extra virgin olive or coconut oil
Directions
If you have a food processor, you can add all the ingredients to it and pulse until the chickpeas are broken down and everything is combined. If not, mash the chickpeas with a masher in a large bowl, then add all the remaining ingredients except the oil and mix thoroghly until everything is combined, you might want to use your hands for this too.
Use the oil to grease a baking tray or cookie sheet, then with wet hands, scoop up some of the mixture, shape into balls, please on the baking tray and bake at 200C for about 15 mins
This great served in a warm pitta bread pocket with a big green salad, tomatos and avocado.
